When brainstorming topics for this month's food feature, my goal was to come up with recipes that felt quintessentially summer. Nothing beats an icy beverage on a hot day, and nothing says summer in a glass better than a zesty homemade mocktail or cocktail, am I right? Thought so. I've put together three simple and incredibly refreshing beverage recipes to help you fully embrace these last few weeks of summer. So chill some glasses, grab your cocktail stirrer, and gather your friends for a summer night filled with delicious beverages!

Homemade Lemon Lime Soda (makes 6 drinks)

Ingredients:
  • ¾ cup freshly squeezed lemon juice
  • ¾ cup freshly squeezed lime juice
  • 2 bottles sparkling water
  • simple syrup
  • lemon and lime slices for garnish
Make the Simple Syrup:

Combine ½ cup sugar with a ½ cup of water. Heat over a medium low flame until sugar is completely dissolved. Set aside to cool.

Make the Sodas:

Fill each glass generously with ice cubes. Pour in 2 tablespoons each of lemon juice, lime juice, and simple syrup. Stir well to chill with the ice. Top with 1 cup of sparkling water (or to the top of the glass), and garnish with extra lemon and lime slices. Serve immediately. Make it happy hour friendly by adding 1 ounce of gin in each glass.

Sweet & Sour Peach Spritzer (makes 6 drinks)

Ingredients:
  • 2 cups peach nectar
  • 1 bottle sparkling water
  • 3 teaspoons lemon juice
  • 3 teaspoons apple cider vinegar
  • 1 ripe peach, sliced
  • fresh mint for garnish
Make the Spritzers:

Fill each glass with 1/3 cup peach nectar, ½ cup sparkling water, ½ a teaspoon lemon juice, and ½ a teaspoon apple cider vinegar. Stir gently, garnish with fresh mint and 2 sliced peaches per glass. Serve immediately. Make it happy hour friendly by adding 1 ounce of vodka in each glass.

Rosé Sparkler (makes roughly 8 cocktails)

Ingredients:
  • 1 bottle Rosé wine
  • 1 bottle sparkling water
  • simple syrup
Make the Simple Syrup:

Combine ½ cup sugar with a half cup of water. Heat over a medium low flame until sugar is completely dissolved. Set aside to cool.

Make the Cocktails:

Fill each champagne flute two thirds of the way with rosé wine, and fill the remaining third with sparkling water. Add in 2 teaspoons of the prepared simple syrup and stir gently. Serve immediately.
