There’s very little cozier than a braised dinner, if you ask me. Braising, as we’ve noted on the site before, is a cooking method in which things (usually) get browned or seared and then cooked “low and slow” (aka on a low heat and for a long time) with the addition of a little bit of liquid. Your food isn’t submerged like when you poach, blanch, or boil, but it’s also not a dry cooking method like roasting or sautéing. Once the temperature starts to dip a bit and the leaves begin to turn, I start to think about all of the things I’m going to braise (like a true nerd, it’s fine). The cranberry pot roast with roasted garlic mashed potatoes I’ve made a few times will definitely get added back into the rotation, as will plenty of braised chicken thighs, but I’m always looking for new ideas as well. Enter these 20 braising recipes, some of which will absolutely happen in my kitchen this year. After all, once winter settles in and it gets really cold, there’s nothing like comfort food to warm you back up.
