There’s very little cozier than a braised dinner, if you ask me. Braising, as we’ve noted on the site before, is a cooking method in which things (usually) get browned or seared and then cooked “low and slow” (aka on a low heat and for a long time) with the addition of a little bit of liquid. Your food isn’t submerged like when you poach, blanch, or boil, but it’s also not a dry cooking method like roasting or sautéing. Once the temperature starts to dip a bit and the leaves begin to turn, I start to think about all of the things I’m going to braise (like a true nerd, it’s fine). The cranberry pot roast with roasted garlic mashed potatoes I’ve made a few times will definitely get added back into the rotation, as will plenty of braised chicken thighs, but I’m always looking for new ideas as well.
