Everygirl Can Cook: 2 Fresh Summer Drinks

When entertaining, I prefer to make freshly-squeezed cocktails in batches. That way I have all of the prepping and cleaning done before any of my friends arrive. Being a huge margarita lover, I’m always experimenting with fresh fruit and tequila. Having much success with a lemonade margarita I created, I decided to try it with fresh-squeezed grapefruit juice! I made mini-grapefruit margaritas using just a few simple ingredients: grapefruit juice, lime, tequila and a little sweetener, and they’re absolutely delicious! The key is to use fresh-squeezed grapefruit juice because the stuff in the box is too bitter. Make sure you add a little salt (or sugar if you prefer) to the rim and garnish with a lime!

Mini Grapefruit Margaritas

Ingredients
3 cups fresh squeezed grapefruit juice
1 tablespoon sugar
1/2 cup tequila
Juice of 1 lime

Directions
Add all of the ingredients into a tall glass bottle and stir until combined. Salt the rims of the glasses and then pour in the grapefruit margarita. You can also serve these in large glasses filled with ice.

Pineapple Sundae

Okay, I’m bringing my inner child out here. If you’ve ever been to Disneyland you’ve probably had the absolutely divine Dole Whips they serve. Yes, I still stand in line for them, just like I did when I was five! I wanted to create my own “healthier” and easier version to make at home. Using low-fat, vanilla frozen yogurt and fresh organic pineapple juice, I made an extremely easy pineapple sundae! They’re a refreshing treat if you’re entertaining but don’t want to serve a heavy dessert. Perfect for outdoor summer get-togethers too!

Ingredients
1 box vanilla frozen yogurt
3 cups fresh squeezed pineapple juice

Directions:
Add 1 box frozen yogurt, 1 cup pineapple juice and a few chunks pineapple and pulse for just a few seconds. You want a whipped texture, not a milkshake. In each glass, add some pineapple juice to the cup, then scoop in some of the pineapple frozen yogurt. You can add more juice and more yogurt until you reach the top. Then garnish with a pineapple chunk!
