I used to have a chronic case of the ‘Sunday Scaries.’ Just the thought of the long workweek would send me right back under the covers. After all, Sundays were made for sleeping in, painting toes, drinking smoothies, and watching reruns of Barefoot Contessa. (For like, 8 hours straight.)

When my best friend introduced me to meal prepping every Sunday to reduce meal related decision anxiety over the week, my entire Sunday mindset changed. I went from snoozing to slicing. Instead of binge-watching, I started basting. You could say that I turned into Ina Garten. (Not really, but Ina, if you are reading this, please take me under your wing!)
